I wish to record the audio from my Sky HD box in the best quality possible. I am using the latest firmware and software.

As far as I am aware, digital audio output of the Sky HD box when set to 'stereo' is 16-Bit/44.1kHz, whereas the ArSoft software offers the lossy 2-channel audio settings of either AC3 or AAC.

Audio is transferred to my computer when the Sky box is set to either 'stereo' or 'Dolby Digital', regardless of whether AC3 or AAC is selected in the software.

My aim is to burn both 2.0 and 5.1 programming onto DVD using AVCHD with the minimum loss of audio and video quality.

Can anyone please help me with the audio settings, or at least confirm what the 'AC3/AAC' setting actually does please?

I use SP-DIF input and it auto detects 2.0 or 5.1 depending on what the SKY box is kicking out. I record at 12Mb in TS format giving excellent results and about 8GB per movie.

The PVR detects what is being sent over SPDIF (2.0 or 5.1). You should set SKY to Dolby Digital and leave it there

The AC3/AAC is if you are using the Left/Right analog inputs. You could run 2 analog cables from SKY to PVR but why would you?

Can you not just record whatever comes into the SPDIF, plus M2TS format and just burn that.
